Pepperonata is a classic Italian dish of slow-cooked bell peppers, onions, tomatoes, and garlic simmered until tender and naturally sweet. It’s a versatile recipe that can be served warm, at room temperature, or chilled alongside a variety of meals.

Ingredients

  • 3 tablespoons olive oil
  • 3 bell peppers (red, yellow, and orange), thinly sliced
  • 1 large onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 medium tomatoes, diced, or 1 cup canned diced tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon red wine vinegar
  • Fresh basil or parsley, chopped, for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced onion and cook for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  4. Add the sliced bell peppers and cook for 10 to 15 minutes, stirring occasionally, until they begin to soften.
  5. Stir in the diced tomatoes, dried oregano, salt, and black pepper.
  6. Reduce the heat to low and simmer for 20 to 25 minutes, stirring occasionally, until the vegetables are tender and the flavors have blended.
  7. Stir in the red wine vinegar during the final minute of cooking.
  8. Garnish with chopped fresh basil or parsley if desired and serve warm, at room temperature, or chilled.

  • Add sliced olives or capers for a briny Mediterranean twist.
  • Stir in crushed red pepper flakes for a little heat.
  • Include zucchini or eggplant for additional vegetables.
  • Top with crumbled goat cheese or fresh mozzarella for a creamy finish.
  • Serve over creamy polenta, pasta, or toasted bread for a heartier meal.
  • Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. The flavors deepen after a day of chilling.
