Ingredients

  • Penne pasta
  • Olive oil
  • Garlic, thinly sliced or minced
  • Crushed red pepper flakes
  • Crushed tomatoes or tomato passata
  • Tomato paste (optional)
  • Salt
  • Black pepper
  • Fresh parsley, chopped
  • Fresh basil (optional)
  • Grated Parmesan or Pecorino Romano cheese, for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the penne until al dente.
  2. Reserve a small amount of the pasta cooking water, then drain the pasta.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Sauté the garlic until fragrant, being careful not to let it brown.
  5. Stir in the crushed red pepper flakes and cook briefly to release their flavor.
  6. Add the crushed tomatoes and tomato paste if using, then season with salt and black pepper.
  7. Simmer the sauce until it thickens slightly and the flavors meld together.
  8. Toss the cooked penne into the sauce, adding a splash of the reserved pasta water if needed for a silky consistency.
  9. Stir in the chopped parsley and fresh basil if using.
  10. Serve immediately with grated Parmesan or Pecorino Romano if desired.
