Pecan Snowball Cookies are buttery, tender shortbread-style cookies filled with finely chopped pecans and generously coated in powdered sugar. Their melt-in-your-mouth texture and snowy finish make them a classic holiday treat.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup pecans, finely chopped
  • 1 1/2 cups additional powdered sugar, for rolling

Instructions

  1. Preheat the oven to 350°F (175°C) and line large baking sheets with parchment paper.
  2. For deeper flavor, lightly toast the pecans, let them cool completely, and chop them finely.
  3. Beat the softened butter and powdered sugar in a large mixing bowl until smooth and creamy.
  4. Add the vanilla extract and mix until evenly incorporated.
  5. Gradually add the flour and salt, mixing on low speed just until a soft dough forms.
  6. Fold in the finely chopped pecans until evenly distributed throughout the dough.
  7. Scoop approximately 1 tablespoon of dough at a time and gently roll it into a ball.
  8. Arrange the dough balls on the prepared baking sheets, leaving a little space between them.
  9. Bake for 12–15 minutes, until the bottoms and edges are very lightly golden.
  10. Cool on the baking sheet for about 5 minutes. While the cookies are still warm but firm enough to handle, gently roll each one in powdered sugar.
  11. Transfer the cookies to a wire rack and cool completely.
  12. Roll the completely cooled cookies in powdered sugar a second time to create a thick, snowy coating.

Notes

  • Toast the pecans before chopping for a deeper, nuttier flavor, and cool them completely before adding them to the dough.
  • Avoid overbaking the cookies so the centers remain tender and delicate.
  • Roll the cookies in powdered sugar twice for the classic thick white snowball finish.
  • Store in an airtight container at room temperature for up to 1 week.
  • If the powdered sugar absorbs during storage, dust the cookies with additional powdered sugar before serving.
  • Freeze baked cookies for up to 2–3 months and apply a fresh powdered sugar coating after thawing.
