Ingredients

  • 4 plain, everything, or whole wheat bagels, sliced in half
  • 8 slices sharp cheddar cheese
  • 1 ripe pear, thinly sliced
  • 1 crisp apple, thinly sliced
  • 2 medium yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon brown sugar (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons Dijon mustard (optional)
  • Butter, softened, for grilling

Instructions

  1. Heat the butter and olive oil in a skillet over medium-low heat.
  2. Add the sliced onions and cook for 20 to 25 minutes, stirring occasionally, until golden and caramelized.
  3. Stir in the brown sugar during the last few minutes if using.
  4. Lightly butter the cut sides of each bagel.
  5. Spread Dijon mustard on the bagel halves if desired.
  6. Layer cheddar cheese, caramelized onions, pear slices, apple slices, and another slice of cheddar on the bottom half of each bagel.
  7. Top with the remaining bagel halves.
  8. Cook the sandwiches in a skillet or panini press over medium-low heat for 4 to 5 minutes per side, pressing gently, until the bagels are toasted and the cheese is melted.
  9. Let the sandwiches rest for 1 minute before slicing and serving warm.
