These Peanut Butter Oatmeal Bars are soft, chewy, and packed with rich peanut butter flavor and hearty oats. They make an easy homemade snack or simple dessert and can be customized with chocolate chips, nuts, or other favorite mix-ins.

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, melted
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips, optional
  • 1/3 cup chopped peanuts, optional

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving an overhang for easy removal.
  2. Add the peanut butter, melted butter, brown sugar, and granulated sugar to a large mixing bowl. Stir until smooth and thoroughly combined.
  3. Add the eggs and vanilla extract and mix until fully incorporated.
  4. In a separate bowl, combine the rolled oats, flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the peanut butter mixture and stir just until a thick, evenly combined dough forms.
  6. Fold in the chocolate chips and chopped peanuts, if using.
  7. Transfer the dough to the prepared pan and press it into an even layer, making sure it reaches the corners.
  8. Bake for 20 to 25 minutes, or until the edges are lightly golden and the center is just set.
  9. Remove from the oven and cool completely in the pan for about 30 minutes so the bars can firm up.
  10. Lift the cooled bars from the pan using the parchment paper and cut into 12 pieces.

  • Avoid overbaking the bars. Remove them when the edges are lightly golden and the center is set for a soft, chewy texture.
  • Natural peanut butter can be used, but stir it thoroughly before measuring so the oils are fully incorporated.
