Peanut Butter Oat Cups are a delicious no-bake snack made with creamy peanut butter, hearty oats, and a touch of sweetness. Perfect for breakfast, meal prep, healthy snacking, or a simple dessert.

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup natural peanut butter
  • ⅓ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ cup mini chocolate chips (optional)
  • 2 tablespoons chia seeds or ground flaxseed (optional)

Instructions

  1. Line a 12-cup muffin tin with paper liners or lightly grease the cups.
  2. In a large mixing bowl, combine the peanut butter, honey, vanilla extract, and salt.
  3. Stir until the mixture is smooth and well blended.
  4. Add the oats and chia seeds or flaxseed if using.
  5. Mix until all the oats are evenly coated.
  6. Fold in the mini chocolate chips if desired.
  7. Divide the mixture evenly among the muffin cups.
  8. Press each portion firmly into the cups using the back of a spoon.
  9. Refrigerate for at least 1 hour, or until firm.
  10. Remove from the muffin tin and serve.
