Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter
  • 1 package mini marshmallows
  • 5 cups crispy rice cereal
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Lightly grease or line an 8×8-inch baking dish with parchment paper.
  2. In a large saucepan over low heat, melt the butter and peanut butter together until smooth.
  3. Stir in the vanilla extract and salt.
  4. Remove the saucepan from the heat and allow the mixture to cool slightly.
  5. Fold in the mini marshmallows and crispy rice cereal until evenly coated.
  6. Transfer the mixture into the prepared baking dish.
  7. Press gently into an even layer without packing too tightly.
  8. Allow the squares to cool and set for about 30 minutes.
  9. Slice into squares and serve.

Notes

  • Do not overheat the peanut butter mixture to keep the squares soft and chewy.
  • Chocolate chips or melted chocolate drizzle make a delicious addition.
  • Crunchy peanut butter can be used for extra texture.
  • Store in an airtight container at room temperature for up to 5 days.
  • These bars can also be frozen for up to 2 months.
