Peach French toast casserole is a warm and comforting breakfast bake made with soft bread, juicy peaches, and a rich custard, baked until golden and set. It’s perfect for brunch or make-ahead mornings.

Ingredients

  • 6 cups cubed bread
  • 2 cups fresh or canned peaches, sliced
  • 6 eggs
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/3 cup brown sugar (optional topping)
  • 2 tablespoons butter (optional topping)
  • 1/2 teaspoon cinnamon (optional topping)

Instructions

  1. Grease a baking dish and spread cubed bread evenly.
  2. Scatter sliced peaches over the bread.
  3. In a bowl, whisk together eggs, milk, cream, sugar, vanilla extract, cinnamon, and nutmeg.
  4. Pour the mixture over the bread and peaches, pressing lightly to soak.
  5. Cover and refrigerate for at least 30 minutes or overnight.
  6. Preheat oven to 350°F (175°C).
  7. If using topping, mix brown sugar, butter, and cinnamon and sprinkle over casserole.
  8. Bake for 40–45 minutes until golden and set.
  9. Let cool slightly before serving.

Notes

  • Use nectarines or berries as a substitute for peaches.
  • Add cream cheese cubes for extra richness.
  • Top with nuts for added crunch.
  • Brioche or challah bread works best for texture.
  • Store leftovers in the refrigerator for up to 4 days.
