Peach Delight is a cool, creamy layered dessert with a buttery graham cracker crust, fluffy cream cheese filling, juicy peaches, and whipped topping. This refreshing make-ahead dessert is perfect for summer gatherings, potlucks, and peach season.

Ingredients

  • Graham cracker crumbs
  • Unsalted butter, melted
  • Granulated sugar
  • Cream cheese, softened
  • Powdered sugar
  • Vanilla extract
  • Whipped topping or freshly whipped cream
  • Fresh ripe peaches, peeled and sliced
  • Granulated sugar
  • Cornstarch
  • Water
  • Fresh lemon juice
  • Whipped topping or freshly whipped cream
  • Fresh peach slices, optional
  • Graham cracker crumbs, optional

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9-by-13-inch baking dish.
  2. Combine the graham cracker crumbs, melted butter, and granulated sugar until evenly moistened.
  3. Press the crumb mixture firmly into the bottom of the prepared baking dish. Bake for 8–10 minutes, then let the crust cool completely.
  4. Beat the softened cream cheese with powdered sugar and vanilla until smooth and creamy.
  5. Gently fold whipped topping or freshly whipped cream into the cream cheese mixture until light and fluffy.
  6. Spread the cream cheese mixture evenly over the completely cooled crust.
  7. Combine granulated sugar, cornstarch, and water in a saucepan. Cook over medium heat, stirring constantly, until thickened and glossy.
  8. Remove the peach filling mixture from the heat and stir in the lemon juice. Let it cool, then gently fold in the sliced peaches.
  9. Carefully spread the peach mixture evenly over the cream cheese layer.
  10. Spread an even layer of whipped topping or freshly whipped cream over the peaches.
  11. Refrigerate for at least 3–4 hours, or overnight for firmer layers.
  12. Before serving, garnish with fresh peach slices or graham cracker crumbs, if desired, and cut into squares.

Notes

  • For a no-bake version, refrigerate the prepared graham cracker crust instead of baking it.
  • Well-drained canned peaches can replace fresh peaches when they are out of season.
  • Chopped toasted pecans can be added for extra crunch and nutty flavor.
  • Crushed vanilla wafers or shortbread cookies can replace the graham crackers.
  • Raspberries, blueberries, or strawberries can be combined with the peaches for a mixed-fruit variation.
