Ingredients

  • For the muffins: 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup sour cream or plain Greek yogurt
  • 1/3 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups diced peaches (fresh, frozen, or well-drained canned peaches)
  • For the crumb topping: 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup melted butter
  • Optional glaze: 1 cup powdered sugar
  • Optional glaze: 2 tablespoons milk
  • Optional glaze: 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line or lightly grease a 12-cup muffin pan.
  2. Prepare the crumb topping by mixing the flour, brown sugar, cinnamon, and melted butter until coarse crumbs form. Set aside.
  3. Whisk together the flour, baking powder, baking soda, salt, and cinnamon in a large bowl.
  4. In another bowl, whisk together the eggs, sugar, milk, sour cream, vegetable oil or melted butter, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  6. Lightly toss the diced peaches with a little flour if desired, then gently fold them into the batter.
  7. Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.
  8. Sprinkle the crumb topping generously over each muffin.
  9. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool the muffins in the pan for 5 minutes before transferring them to a wire rack. Drizzle with the optional vanilla glaze after cooling if desired.

Notes

  • Fresh, frozen, or well-drained canned peaches all work well in this recipe.
  • Toss the peaches with a little flour to help prevent them from sinking.
  • Add chopped pecans, walnuts, blueberries, or a pinch of nutmeg for delicious variations.
  • Store in the refrigerator for up to 5 days because of the fruit, or freeze for up to 3 months.
  • Warm before serving for the best flavor and texture.
