Ingredients
3 tablespoons chia seeds
1 cup milk (dairy or plant-based)
1 cup ripe peaches, peeled and diced or blended
1 tablespoon honey or maple syrup
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
In a bowl or jar, combine the chia seeds and milk, stirring well to prevent clumping.
Add the peaches, honey or maple syrup, vanilla extract, and a pinch of salt.
Mix until everything is evenly incorporated.
Let the mixture sit for 5–10 minutes, then stir again to break up any clumps.
Cover and refrigerate for at least 4 hours or overnight.
Before serving, stir well and adjust consistency with a splash of milk if needed.
Top with additional peach slices or a drizzle of honey if desired, then serve.
Notes
Blend the peaches for a smoother texture or leave them chunky for more bite.
Substitute peaches with nectarines, mangoes, or berries for variation.
Add yogurt for extra creaminess or granola for crunch.
Store in the refrigerator for up to 3 days in an airtight container.
Stir before serving as the pudding may thicken over time.
