Ingredients

  • 1 French baguette, sliced into 16 pieces
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 8 ounces burrata cheese
  • 2 fresh peaches, thinly sliced
  • 3 tablespoons hot honey
  • Fresh basil leaves
  • 1/2 teaspoon flaky sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Optional Garnishes:
  • Fresh thyme leaves
  • Crushed pistachios
  • Balsamic glaze
  • Lemon zest
  • Crushed red pepper flakes

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange the baguette slices on the baking sheet and lightly brush both sides with olive oil.
  3. Sprinkle a generous layer of grated Parmesan over each slice.
  4. Bake for 10 to 12 minutes, or until the bread is golden and the Parmesan is crisp.
  5. Allow the crostini to cool slightly.
  6. Tear the burrata into portions and place or spread it over each crostini.
  7. Top with several slices of fresh peach.
  8. Drizzle generously with hot honey.
  9. Season with flaky sea salt and freshly ground black pepper.
  10. Garnish with fresh basil and any optional toppings before serving immediately.

Notes

  • Fresh nectarines or apricots make excellent substitutes for peaches.
  • Whipped ricotta or fresh mozzarella can replace the burrata if needed.
  • Add thin slices of prosciutto for a savory variation.
  • Prepare the crostini ahead of time and assemble just before serving to keep the bread crisp.
  • Store baked crostini in an airtight container at room temperature for up to 2 days.
