Pea and Wild Garlic Risotto with Cheddar Tuile is a creamy and elegant dish featuring tender arborio rice, sweet peas, and fragrant wild garlic topped with crisp cheddar tuiles. Ingredients

  • 1 1/2 cups arborio rice
  • 1 cup wild garlic, chopped
  • 1 cup peas
  • 1 small onion or shallot, finely diced
  • 2 cloves garlic, minced
  • 5 cups vegetable broth
  • 1/2 cup white wine
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1/2 cup parmesan cheese, grated
  • 1 cup cheddar cheese, grated
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh parsley or pea shoots for garnish

Instructions

  1. Preheat the oven to 400°F.
  2. To make the cheddar tuile, place small piles of grated cheddar cheese onto a parchment-lined baking sheet. Flatten slightly and bake for 5 to 7 minutes until golden and crisp. Allow to cool completely.
  3. Heat the vegetable broth in a saucepan and keep warm over low heat.
  4. In a large skillet or saucepan, heat the olive oil and 1 tablespoon butter over medium heat.
  5. Add the onion or shallot and cook until softened, about 4 minutes. Stir in the minced garlic and cook until fragrant.
  6. Add the arborio rice and stir for 1 to 2 minutes until lightly toasted.
  7. Pour in the white wine and cook until mostly absorbed.
  8. Add the warm broth one ladle at a time, stirring frequently and allowing the liquid to absorb before adding more.
  9. When the rice is nearly tender, stir in the peas and chopped wild garlic.
  10. Continue cooking until the rice is creamy and fully cooked.
  11. Stir in the remaining butter and parmesan cheese. Season with salt and black pepper to taste.
  12. Spoon the risotto into bowls and top with cheddar tuile pieces and fresh herbs before serving.
