Ingredients

  • 12 oz pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon lemon juice

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1/4 cup pasta water, then drain.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add garlic and sauté until fragrant.
  4. Add zucchini, bell pepper, broccoli, and carrot. Cook until tender-crisp.
  5. Stir in cherry tomatoes and cook briefly.
  6. Season with salt, pepper, and Italian seasoning.
  7. Add cooked pasta to the skillet and toss with vegetables.
  8. Pour in reserved pasta water to create a light sauce.
  9. Stir in lemon juice and parmesan cheese, tossing to combine.
  10. Serve warm with extra cheese if desired.
