This Party Pasta Salad is a colorful, refreshing side dish loaded with tender pasta, crisp vegetables, savory cheese, and a zesty homemade dressing. It’s an easy make-ahead recipe that’s perfect for picnics, potlucks, barbecues, and family gatherings.

Ingredients

  • 1 pound rotini or bowtie pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup black olives, sliced
  • 1 cup mozzarella pearls
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • For the dressing: 1/2 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon honey
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Cook the pasta according to the package directions until al dente.
  2. Drain the pasta, rinse under cold water to stop the cooking process, and let it drain completely.
  3. Whisk together the olive oil, red wine vinegar, Dijon mustard, Italian seasoning, garlic powder, honey, salt, and black pepper until smooth.
  4. In a large serving bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell peppers, red onion, black olives, mozzarella pearls, Parmesan cheese, parsley, and basil.
  5. Pour the dressing over the pasta salad and toss until evenly coated.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
  7. Toss again before serving and adjust seasoning if needed.

Notes

  • Add diced salami, pepperoni, grilled chicken, or ham for extra protein.
  • Substitute feta cheese or cheddar cubes for the mozzarella pearls.
