Parmesan Corn on the Cob with Smoky Garlic Parmesan Butter is a delicious twist on a summer classic, featuring sweet corn coated in rich, garlicky butter with smoky paprika and savory Parmesan. It’s an easy side dish that’s perfect for barbecues, picnics, and family dinners.

Ingredients

  • 6 fresh ears of corn, husked
  • 1/2 cup unsalted butter, softened
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, finely chopped
  • Lemon wedges, for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil or preheat a grill to medium-high heat.
  2. Cook the corn by boiling for 6-8 minutes or grilling for 10-12 minutes, turning occasionally, until tender and lightly charred.
  3. While the corn cooks, combine the softened butter, Parmesan cheese, garlic, smoked paprika, garlic powder, onion powder, salt, black pepper, and parsley in a small bowl.
  4. Mix until smooth and well combined.
  5. Remove the cooked corn from the heat and pat dry if boiled.
  6. Generously spread the smoky garlic Parmesan butter over each ear of hot corn.
  7. Sprinkle with additional Parmesan cheese and parsley if desired.
  8. Serve immediately with lemon wedges for squeezing over the top.

Notes

  • Add cayenne pepper or chili powder for a spicy version.
  • Substitute Pecorino Romano for Parmesan for a sharper flavor.
  • Use lime instead of lemon for a citrus variation.
  • Top with crispy cooked bacon or a drizzle of hot honey for extra flavor.
  • The butter can be made up to 1 week in advance and refrigerated.
  • Store leftover corn in the refrigerator for up to 3 days and reheat in the microwave, oven, or on the grill.
  • The garlic Parmesan butter freezes well for up to 3 months.
