A creamy, no-cook breakfast made with oats, chia seeds, peanut butter, and bananas for a satisfying and energizing start to the day.

Ingredients

  • 1/2 cup rolled oats
  • 1 tablespoon chia seeds
  • 3/4 cup milk (dairy or plant-based)
  • 1 tablespoon peanut butter
  • 1 ripe banana, sliced or mashed
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a jar or bowl, combine the rolled oats and chia seeds.
  2. Pour in the milk and stir well to combine.
  3. Add the peanut butter, mashed banana, honey or maple syrup, vanilla extract, and a pinch of salt.
  4. Stir until the mixture is smooth and fully combined.
  5. Cover and refrigerate overnight, or for at least 6 hours.
  6. In the morning, stir the mixture and add a splash of milk if it is too thick.
  7. Top with additional banana slices or peanut butter if desired, then serve.

Notes

  • Substitute peanut butter with almond or cashew butter for variation.
  • Add cocoa powder for a chocolate flavor or mix in fresh berries.
  • Top with granola or chopped nuts for extra crunch.
  • Store in the refrigerator for up to 3 days in a sealed container.
  • If reheating, add a splash of milk to maintain a creamy consistency.
