Over Easy Eggs have tender, fully set whites and warm, runny yolks, making them a quick and satisfying breakfast. Gentle heat and a brief cook after flipping create the classic texture in just a few minutes.

Ingredients

  • 2 large eggs
  • 1 tablespoon butter or cooking oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chopped fresh herbs, optional

Instructions

  1. Place a nonstick or well-seasoned skillet over medium-low heat and warm it for about 1 minute. Add the butter and let it melt, swirling the skillet to coat the bottom evenly.
  2. Crack each egg into a small bowl or ramekin, then carefully slide the eggs into the warm skillet without breaking the yolks.
  3. Cook the eggs undisturbed for 2–3 minutes, until the whites are mostly set but the yolks remain completely soft.
  4. Carefully slide a wide, thin spatula underneath each egg, making sure it releases completely from the skillet.
  5. Gently flip each egg in one smooth motion, taking care not to break the yolk.
  6. Cook the second side for approximately 20–30 seconds, just until the whites are set while the yolks remain runny.
  7. Carefully transfer the eggs to a plate. Season with salt, freshly ground black pepper, and optional fresh herbs, then serve immediately.

Notes

  • Keep the heat at medium-low to prevent the bottoms from becoming tough or overly crisp before the whites set.
  • A wide, thin spatula and nonstick or well-seasoned skillet make flipping easier.
  • For herbed eggs, garnish with chopped chives, parsley, dill, or green onions.
  • For extra heat, add crushed red pepper flakes or hot sauce before serving.
  • Serve over avocado toast or use in a breakfast sandwich with cheese and other favorite fillings.
  • Over Easy Eggs are best prepared immediately before serving and are not recommended for storage and reheating because the yolks are intentionally runny.
  • Runny yolks can carry a greater foodborne-illness risk. Use pasteurized eggs when appropriate or cook both the whites and yolks until firm for a more thoroughly cooked option.
