Oven Baked Italian Sausage is an easy, hands-off recipe that produces juicy, flavorful sausages with a perfectly browned exterior. Serve them with roasted vegetables, pasta, mashed potatoes, or in sandwiches for a satisfying meal.

Ingredients

  • to 2 pounds Italian sausage links (sweet, mild, or hot)
  • 1 tablespoon olive oil (optional)
  • 1 teaspoon Italian seasoning (optional)
  • 1 red bell pepper, sliced (optional)
  • 1 green bell pepper, sliced (optional)
  • 1 large onion, sliced (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Lightly grease a rimmed baking sheet or baking dish with olive oil if desired.
  3. If using vegetables, spread the sliced peppers and onions across the baking sheet.
  4. Arrange the Italian sausage links in a single layer, leaving a little space between each one.
  5. Sprinkle the vegetables with Italian seasoning if using.
  6. Bake for 20 minutes.
  7. Turn the sausages over with tongs and stir the vegetables.
  8. Continue baking for 10 to 15 minutes, or until the sausages are browned and reach an internal temperature of 160°F (71°C) for pork sausage or 165°F (74°C) for chicken or turkey sausage.
  9. Let the sausages rest for 5 minutes before serving.
  10. Garnish with fresh parsley if desired and serve.

Notes

  • Do not pierce the sausage casings before baking to help retain their juices.
  • Skip the olive oil if preferred, as the sausages release enough fat while cooking.
  • Add potatoes, zucchini, mushrooms, or cherry tomatoes for a complete one-pan meal.
  • Brush the sausages with garlic butter before baking for extra richness.
  • Serve in toasted hoagie rolls with peppers, onions, and provolone cheese.
