Ingredients

  • 24 Oreo cookies
  • 2 cups vanilla ice cream, softened slightly
  • 1/2 cup mini chocolate chips, sprinkles, or crushed Oreos for coating
  • Chocolate syrup, optional

Instructions

  1. Let the ice cream soften at room temperature until easy to scoop but not melted.
  2. Carefully separate the Oreo cookies, keeping the cookie halves intact.
  3. Place a scoop of ice cream onto one Oreo half.
  4. Top with another Oreo half and gently press together to form a sandwich.
  5. Roll the exposed ice cream edges in mini chocolate chips, sprinkles, or crushed Oreos if desired.
  6. Arrange the sandwiches on a parchment-lined tray.
  7. Freeze for 1 to 2 hours, or until firm.
  8. Serve directly from the freezer.
