These soft and fluffy Orange Muffins are bursting with fresh citrus flavor from orange juice and fragrant zest. They’re perfect for breakfast, brunch, or an afternoon snack, with an optional orange glaze for extra sweetness.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1/4 cup milk
  • 1/2 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • Optional glaze: 1 cup powdered sugar
  • Optional glaze: 2 tablespoons fresh orange juice
  • Optional glaze: 1 teaspoon orange zest

Instructions

  1. Preheat the oven to 375°F (190°C) and line or grease a 12-cup muffin pan.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  3. In a separate bowl, whisk together the eggs, orange juice, orange zest, milk, vegetable oil or melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  5. Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.
  6. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the muffins in the pan for 5 minutes before transferring them to a wire rack.
  8. If desired, whisk together the glaze ingredients and drizzle over the cooled muffins before serving.
