One Pot Lasagna is a hearty, comforting meal that delivers all the classic flavors of traditional lasagna in a single pot. Tender pasta cooks in a rich tomato sauce with savory meat and plenty of melted cheese for an easy weeknight dinner.

Ingredients

  • Ground beef or Italian sausage
  • Olive oil
  • Yellow onion, diced
  • Garlic cloves, minced
  • Italian seasoning
  • Dried oregano
  • Crushed red pepper flakes (optional)
  • Salt
  • Black pepper
  • Crushed tomatoes
  • Tomato sauce
  • Beef or chicken broth
  • Lasagna noodles, broken into pieces
  • Ricotta cheese
  • Mozzarella cheese, shredded
  • Parmesan cheese, grated
  • Fresh basil or parsley, chopped for garnish

Instructions

  1. Heat the olive oil in a large deep skillet or Dutch oven over medium heat.
  2. Cook the ground beef or Italian sausage until browned, then drain any excess fat if needed.
  3. Add the diced onion and cook until softened before stirring in the minced garlic.
  4. Season with Italian seasoning, oregano, crushed red pepper flakes if using, salt, and black pepper.
  5. Stir in the crushed tomatoes, tomato sauce, and broth until well combined.
  6. Add the broken lasagna noodles and stir to coat them in the sauce.
  7. Bring to a gentle boil, then reduce the heat, cover, and simmer for about 20 minutes, stirring occasionally, until the noodles are tender.
  8. Stir in half of the mozzarella and Parmesan cheese until melted.
  9. Spoon dollops of ricotta over the top and sprinkle with the remaining mozzarella and Parmesan.
  10. Cover the pot for a few minutes until the cheese is melted.
  11. Garnish with fresh basil or parsley before serving.

  • Use cottage cheese instead of ricotta if preferred.
