Ingredients

  • 8 eggs
  • 1 cup shredded cheese
  • 1 cup cooked bacon, sausage, or ham
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional add-ins: spinach, mushrooms, tomatoes, jalapeños, green onions, salsa

Instructions

  1. Bring a large pot of water to a gentle boil.
  2. Label one quart-size freezer-safe resealable bag for each person.
  3. Crack the eggs into the bags and seal tightly.
  4. Gently squeeze and mix the eggs inside the bags until well beaten.
  5. Open the bags and add cheese, cooked meat, vegetables, salt, and black pepper.
  6. Seal the bags again, removing as much air as possible.
  7. Carefully place the bags into the boiling water.
  8. Cook for about 13–15 minutes, gently moving the bags occasionally to ensure even cooking.
  9. Once the eggs are fully set, carefully remove the bags from the water using tongs.
  10. Open the bags carefully and slide the omelets onto plates.
  11. Serve warm with optional toppings like salsa or green onions.

Notes

  • Use freezer-safe resealable bags for best results and durability during boiling.
  • Remove excess air from the bags to help the omelets cook evenly.
  • Cooked meats and chopped vegetables can be prepared ahead of time for easy assembly.
  • Several bags can cook in the same pot at once.
  • Store leftovers in the refrigerator for up to 3 days.
  • Reheat gently in the microwave or skillet until warmed through.
  • Vegetarian omelets can be made by omitting the meat and adding extra vegetables.
