Olive Oil Pasta is a simple Italian-inspired dish featuring perfectly cooked pasta tossed with extra virgin olive oil, garlic, and fresh herbs. Light, flavorful, and ready in minutes, it makes an easy lunch, weeknight dinner, or versatile side dish.

Ingredients

  • Spaghetti, linguine, or pasta of choice
  • Extra virgin olive oil
  • Garlic, thinly sliced or minced
  • Fresh parsley, chopped
  • Grated Parmesan cheese (optional)
  • Crushed red pepper flakes (optional)
  • Lemon zest (optional)
  • Salt
  • Black pepper

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente.
  2. Reserve a small amount of the pasta cooking water, then drain the pasta.
  3. Heat the extra virgin olive oil in a large skillet over medium-low heat.
  4. Gently cook the garlic until fragrant, being careful not to let it brown.
  5. Stir in the crushed red pepper flakes if using.
  6. Add the cooked pasta to the skillet and toss with the garlic-infused olive oil.
  7. Add a splash of the reserved pasta water to create a light, silky sauce.
  8. Season with salt and black pepper.
  9. Finish with fresh parsley, lemon zest if using, and grated Parmesan cheese if desired.
  10. Serve immediately with an extra drizzle of olive oil and additional Parmesan if desired.

  • Spaghetti and linguine are classic choices, but any pasta shape works well.
  • Add sautéed mushrooms, spinach, cherry tomatoes, or broccoli for extra vegetables.
