No Churn Strawberry Shortcake Ice Cream is a rich and creamy frozen dessert made without an ice cream maker. Packed with sweet strawberries, buttery cookie crumbles, and a smooth vanilla base, it’s an easy treat that’s perfect for warm days and special occasions.

Ingredients

  • 2 cups heavy whipping cream
  • 1 (14-ounce) can sweetened condensed milk
  • 2 tsp vanilla extract
  • Pinch of salt
  • 2 cups fresh strawberries, diced
  • 1 tbsp granulated sugar
  • 1 cup crushed shortbread cookies or vanilla sandwich cookies
  • 2 tbsp melted butter (optional, for cookie crumble)
  • Fresh strawberry slices, optional garnish
  • Extra cookie crumbs, optional garnish

Instructions

  1. Combine the diced strawberries with the granulated sugar and let them sit for about 15 minutes until juicy.
  2. Whip the heavy whipping cream until stiff peaks form.
  3. In a separate bowl, stir together the sweetened condensed milk, vanilla extract, and a pinch of salt.
  4. Gently fold the whipped cream into the condensed milk mixture until fully combined.
  5. If desired, mix the crushed cookies with the melted butter to create a crisp cookie crumble.
  6. Fold the strawberries and most of the cookie pieces into the ice cream mixture, reserving a small amount for the top.
  7. Transfer the mixture to a freezer-safe loaf pan or airtight container.
  8. Sprinkle the reserved cookie crumbs over the top and gently swirl them into the mixture.
  9. Cover tightly and freeze for at least 6 hours or overnight.
  10. Let the ice cream sit at room temperature for 5–10 minutes before scooping and serving.

  • Use fresh strawberries for the best flavor and texture.
  • If using frozen strawberries, thaw and drain them well before adding.
  • Press plastic wrap directly onto the surface before sealing to help reduce ice crystals.
