No-Bake Strawberry Tiramisu is a light and elegant dessert featuring layers of juicy strawberries, creamy mascarpone filling, and tender ladyfingers. This refreshing make-ahead treat is perfect for spring and summer gatherings.

Ingredients

  • 1 1/2 pounds fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 8 ounces mascarpone cheese, softened
  • 1 cup heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • 1/2 cup strawberry juice from the macerated berries
  • Fresh strawberries for garnish
  • Powdered sugar for garnish
  • Mint leaves, optional, for garnish

Instructions

  1. Combine the sliced strawberries, granulated sugar, and lemon juice in a bowl.
  2. Let the mixture sit for 20 minutes until the berries release their juices.
  3. Strain the strawberries and reserve 1/2 cup of the juice.
  4. Beat the heavy whipping cream until soft peaks form.
  5. In a separate bowl, mix the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  6. Gently fold the whipped cream into the mascarpone mixture until fully combined.
  7. Quickly dip each ladyfinger into the reserved strawberry juice.
  8. Arrange a layer of dipped ladyfingers in the bottom of an 8×8-inch dish.
  9. Spread half of the mascarpone mixture over the ladyfingers.
  10. Top with half of the strawberries.
  11. Repeat with another layer of dipped ladyfingers, the remaining mascarpone mixture, and the remaining strawberries.
  12. Cover and refrigerate for at least 4 hours or overnight.
  13. Garnish with fresh strawberries, powdered sugar, and mint leaves before serving.

  • For extra citrus flavor, add lemon zest to the mascarpone mixture.
  • Use a blend of berries for a mixed berry variation.
  • Do not soak the ladyfingers too long to prevent a soggy texture.
