Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, pureed
  • 1 tablespoon lemon juice
  • 1 1/2 cups heavy whipping cream
  • 1 1/2 cups fresh strawberries, sliced
  • 1/4 cup strawberry preserves, warmed (optional)

Instructions

  1. Combine the graham cracker crumbs, melted butter, and granulated sugar in a bowl.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan.
  3. Refrigerate the crust while preparing the filling.
  4. Beat the cream cheese until smooth and creamy.
  5. Mix in the powdered sugar and vanilla extract until fully combined.
  6. Stir in the strawberry puree and lemon juice.
  7. In a separate bowl, whip the heavy cream until stiff peaks form.
  8. Fold the whipped cream into the strawberry mixture until smooth.
  9. Spread the filling evenly over the chilled crust.
  10. Cover and refrigerate for at least 6 hours or overnight until set.
  11. Arrange the sliced strawberries on top before serving.
  12. Brush with warmed strawberry preserves if desired.
