Ingredients

  1. 2 cups rolled oats
    1 cup peanut butter or almond butter
    1/2 cup honey or maple syrup
    1/4 cup unsweetened cocoa powder
    1 teaspoon vanilla extract
    1/2 cup mini chocolate chips (optional)

Instructions

Line an 8×8-inch pan with parchment paper.

  1. In a saucepan over low heat, combine peanut butter, honey, cocoa powder, and vanilla extract. Stir until smooth and heated through.
  2. Remove from heat and stir in oats and chocolate chips (if using).
  3. Press mixture firmly into the prepared pan in an even layer.
  4. Refrigerate for at least 2 hours or until set.
  5. Remove from pan and cut into bars.
