No Bake Cherry Cheesecake Bars are a creamy, layered dessert with a buttery graham cracker crust, rich cream cheese filling, and a sweet cherry topping—all without turning on the oven.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 can (21 oz) cherry pie filling

Instructions

  1. In a bowl, combine graham cracker crumbs and melted butter until well mixed.
  2. Press the mixture firmly into the bottom of a greased or parchment-lined 9×9-inch pan. Chill while preparing the filling.
  3. In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. In a separate bowl, whip the heavy cream to stiff peaks.
  5. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  6. Spread the cream cheese filling evenly over the chilled crust.
  7. Spoon cherry pie filling over the top and gently spread it into an even layer.
  8. Cover and refrigerate for at least 4 hours or overnight until fully set.
  9. Slice into bars and serve chilled.

Notes

  • For clean slices, use a hot knife wiped clean between cuts.
  • Freeze without topping for up to 2 months; add cherries after thawing.
