Nectarine Upside-Down Cake is a beautiful fruit dessert featuring caramelized nectarines atop a soft, buttery cake. It’s a wonderful way to showcase fresh summer nectarines and is delicious served warm with whipped cream or vanilla ice cream.

Ingredients

  • 4 ripe nectarines, sliced
  • 1/4 cup unsalted butter, melted
  • 1/2 cup light brown sugar
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/4 teaspoon almond extract (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Pour the melted butter into the pan, sprinkle evenly with the brown sugar, and arrange the nectarine slices decoratively over the top. Sprinkle with cinnamon if using.
  3. Whisk together the flour, baking powder, and salt in a bowl.
  4. In a separate bowl, beat the softened butter and granulated sugar until light and fluffy.
  5. Beat in the eggs one at a time, then mix in the vanilla extract and almond extract if using.
  6. Gradually add the dry ingredients alternately with the milk, mixing just until combined.
  7. Carefully spread the batter evenly over the nectarines.
  8. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes.
  10. Carefully invert the cake onto a serving plate, cool slightly, slice, and serve.

Notes

  • No need to peel the nectarines; the skins soften during baking.
  • Peaches, plums, or apricots make excellent substitutes.
  • Add chopped pecans or sliced almonds beneath the fruit for extra crunch.
  • Store covered at room temperature for up to 2 days or refrigerate for up to 5 days.
  • Freeze individual slices for up to 2 months.
  • Serve warm with vanilla ice cream, whipped cream, crème fraîche, or caramel sauce.
