Ingredients

  • Soft sandwich bread
  • Hard-boiled eggs, chopped
  • Cucumber, finely diced
  • Celery, finely diced
  • Carrot, grated
  • Green onions, finely sliced
  • Mayonnaise
  • Dijon mustard
  • Fresh lemon juice
  • Fresh parsley, chopped
  • Salt
  • Freshly ground black pepper
  • Butter, softened (optional, for spreading)
  • Lettuce leaves

Instructions

  1. Place the chopped hard-boiled eggs, cucumber, celery, grated carrot, and green onions in a large mixing bowl.
  2. Add the mayonnaise, Dijon mustard, lemon juice, chopped parsley, salt, and black pepper.
  3. Gently mix until all the ingredients are evenly coated.
  4. Taste and adjust the seasoning if needed.
  5. Lightly butter the bread slices if desired.
  6. Layer lettuce leaves on one slice of bread and generously spoon the salad filling over the top.
  7. Cover with another slice of bread and gently press together.
  8. Slice in half and serve immediately, or refrigerate until ready to enjoy.
