This Mushroom Onion Grilled Cheese is a rich, savory twist on the classic comfort sandwich, featuring golden sautéed mushrooms, sweet onions, and gooey melted cheese between crispy, buttery slices of bread. It’s perfect for a satisfying lunch or an easy dinner.

Ingredients

  • 8 ounces cremini or button mushrooms, sliced
  • 1 medium yellow onion, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 8 slices sourdough or country bread
  • 8 slices sharp cheddar, Swiss, Gruyère, or provolone cheese
  • Softened butter, for spreading on the bread

Instructions

  1. Heat the butter and olive oil in a large skillet over medium heat.
  2. Add the onions and cook until they begin to soften.
  3. Stir in the mushrooms and cook until they release their moisture and become golden brown.
  4. Season with salt, black pepper, and fresh thyme if using, then remove from the heat.
  5. Spread softened butter on one side of each slice of bread.
  6. Place four slices of bread, buttered side down, in a skillet over medium-low heat.
  7. Layer cheese, the mushroom and onion mixture, and another slice of cheese on each sandwich.
  8. Top with the remaining bread, buttered side facing up.
  9. Cook for 3 to 5 minutes per side until the bread is golden brown and the cheese is fully melted.
  10. Let the sandwiches rest for 1 minute before slicing and serving.
