Ingredients

  • 1 package muffin mix (any flavor)
  • 2 eggs
  • 3/4 cup milk
  • 2 tablespoons oil or melted butter

Instructions

  1. In a mixing bowl, combine the muffin mix, eggs, milk, and oil or melted butter.
  2. Stir until just combined, being careful not to overmix.
  3. Heat a nonstick skillet or griddle over medium heat and lightly grease it.
  4. Pour small amounts of batter onto the hot surface to form pancakes.
  5. Cook until bubbles form on the surface and edges begin to set.
  6. Flip and cook the other side until golden brown.
  7. Remove from the pan and serve warm with your favorite toppings.
