This Mortadella Sandwich is an Italian-inspired favorite featuring silky mortadella, creamy cheese, fresh vegetables, and a flavorful spread on crusty bread. It’s quick to prepare, satisfying, and perfect for lunch, dinner, or a picnic.

Ingredients

  • 4 ciabatta rolls, focaccia, or crusty Italian sandwich rolls
  • 12 ounces thinly sliced mortadella
  • 4 slices provolone, mozzarella, or burrata cheese
  • 2 cups fresh arugula
  • 1 large tomato, sliced
  • 1/4 small red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic glaze
  • 2 tablespoons mayonnaise or pesto
  • 1 teaspoon Dijon mustard (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Slice the rolls in half and lightly toast them if desired.
  2. Spread the mayonnaise or pesto evenly over the bottom halves of the rolls.
  3. Spread Dijon mustard on the top halves if using.
  4. Layer the mortadella generously on each roll, folding the slices slightly for extra texture.
  5. Add the cheese, tomato slices, red onion, and fresh arugula.
  6. Drizzle the olive oil and balsamic glaze over the vegetables.
  7. Season lightly with salt and black pepper.
  8. Top with the remaining halves of the rolls and gently press together.
  9. Slice the sandwiches in half and serve immediately.

  • Substitute burrata, fontina, or mozzarella for the provolone.
  • Add roasted red peppers, basil, pepperoncini, or grilled vegetables for extra flavor.
  • Use olive tapenade instead of mayonnaise for a Mediterranean-inspired variation.
