This Moroccan Carrot Salad combines tender carrots with fresh lemon, olive oil, garlic, herbs, cumin, and paprika for a bright and aromatic side dish. Serve it warm, chilled, or at room temperature alongside your favorite North African or Mediterranean-inspired dishes.

Ingredients

  • 1 pound carrots, peeled and sliced into rounds
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, finely minced or grated
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sweet or smoked paprika
  • 1/4 teaspoon ground coriander
  • Pinch of cayenne pepper, optional
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon honey or maple syrup, optional
  • Extra lemon wedges for serving, optional

Instructions

  1. Peel the carrots and slice them into evenly sized rounds.
  2. Bring a pot of lightly salted water to a boil. Add the carrots and cook for 6–8 minutes, or until tender but still firm enough to hold their shape.
  3. Drain the carrots thoroughly and let them cool slightly while preparing the dressing.
  4. In a large bowl, combine the olive oil, lemon juice, garlic, cumin, paprika, coriander, optional cayenne pepper, salt, and black pepper. Stir in the optional honey or maple syrup for a slightly sweeter dressing.
  5. Add the warm carrots to the dressing and gently toss until evenly coated.
  6. Add the chopped parsley and cilantro and toss again. Taste and adjust the lemon juice, salt, or spices as needed.
  7. Serve immediately or let the salad rest for 20–30 minutes before serving to allow the flavors to develop.

Notes

  • Cook the carrots only until tender while still holding their shape to prevent a mushy salad.
  • Dressing the carrots while they are slightly warm helps them absorb the lemon, garlic, and spices.
  • For a spicier salad, increase the cayenne pepper or add harissa to taste.
  • For a sweeter variation, add honey and garnish with raisins or chopped dates.
  • For extra crunch, add toasted almonds, pistachios, or pine nuts shortly before serving.
  • For a citrus variation, replace some of the lemon juice with fresh orange juice and add orange zest.
  • Add cooked chickpeas for a more substantial salad.
  • The carrots can also be roasted at 425°F (220°C) until tender and lightly caramelized before being tossed with the dressing and herbs.
  • Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
  • Serve chilled, warm, or at room temperature. After refrigeration, let the salad stand at room temperature for 15–20 minutes if desired.
  • Refresh leftover salad with a drizzle of olive oil, fresh lemon juice, and additional herbs before serving.
