Mocha Almond Fudge Brownies

Why You’ll Love This Recipe

I love these brownies because they give me three flavors that work beautifully together: chocolate, coffee, and toasted almonds. The coffee makes the chocolate taste deeper and richer, while the almonds provide a satisfying crunch.

I also like the texture. These aren’t light, cakey brownies. I make them intentionally moist and fudgy, with slightly chewy edges and a soft center.

The recipe is easy to customize, too. I can increase the coffee flavor, add extra chocolate chunks, switch the almonds for another nut, or finish the brownies with a mocha glaze when I want an even more decadent dessert.

Ingredients

(Tip: You’ll find the full list of ingredients and measurements in the recipe card below.)

For the Brownies

  • 1/2 cup unsalted butter
  • 6 ounces semisweet or dark chocolate, chopped
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant espresso powder
  • 1 tablespoon hot water
  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 3/4 cup chopped almonds
  • 1/2 cup semisweet chocolate chips or chunks

For the Optional Mocha Topping

  • 1/2 cup semisweet chocolate chips
  • 2 tablespoons heavy cream
  • 1/2 teaspoon instant espresso powder
  • 2 tablespoons chopped toasted almonds

Directions

1. Prepare the Pan

I preheat my oven to 350°F (175°C). I lightly grease an 8-inch square baking pan and line it with parchment paper, leaving a little overhang on the sides so I can easily lift the brownies out later.

2. Melt the Chocolate and Butter

I place the butter and chopped chocolate in a heatproof bowl. I melt them together in short intervals in the microwave, stirring between each interval until completely smooth.

I let the mixture cool for a few minutes before adding the remaining ingredients.

3. Prepare the Espresso

I stir the instant espresso powder into the hot water until dissolved. This concentrated coffee mixture gives me noticeable mocha flavor without adding too much extra liquid to the batter.

4. Mix the Sugar and Eggs

I whisk the granulated sugar and brown sugar into the melted chocolate mixture. Then I add the eggs one at a time, whisking well after each addition.

I stir in the vanilla and dissolved espresso until everything is smooth and glossy.

5. Add the Dry Ingredients

In a separate bowl, I combine the flour, cocoa powder, and salt. I gently fold these dry ingredients into the chocolate mixture.

I stop mixing as soon as I no longer see streaks of flour. I avoid overmixing because I want the finished brownies to stay dense and fudgy.

6. Add the Almonds and Chocolate

I fold the chopped almonds and chocolate chips into the batter, reserving a small handful of each for the top if I want a more decorative finish.

7. Bake the Brownies

I spread the batter evenly in my prepared pan and sprinkle the reserved almonds and chocolate over the top.

I bake the brownies for about 25 to 30 minutes. I know they’re ready when the edges look set but a toothpick inserted into the center still comes out with several moist crumbs.

8. Cool

I let the brownies cool completely in the pan. This is important because the center continues to set as it cools, giving me that dense, fudgy consistency.

Once they’re cool, I use the parchment paper to lift them from the pan and cut them into squares.

9. Add the Optional Mocha Topping

For an extra-rich finish, I combine the chocolate chips, heavy cream, and espresso powder. I heat the mixture gently until the chocolate melts, then stir until smooth.

I spread or drizzle the mocha chocolate topping over the cooled brownies and finish them with chopped toasted almonds.

Servings and Timing

I usually cut these brownies into 16 squares. Since they’re rich and fudgy, I find that smaller portions are satisfying.

  • Prep time: 20 minutes
  • Bake time: 25–30 minutes
  • Cooling time: about 1 hour
  • Total time: approximately 1 hour 50 minutes
  • Servings: 16 brownies

Variations

For stronger coffee flavor, I increase the instant espresso powder slightly. I can also add finely chopped chocolate-covered espresso beans to the batter for extra mocha intensity and crunch.

When I want even more chocolate, I replace some of the semisweet chocolate chips with dark chocolate chunks or milk chocolate chips.

If I don’t have almonds, I use chopped walnuts, pecans, or hazelnuts instead. I especially like hazelnuts when I want a flavor similar to chocolate-hazelnut desserts.

For a sweeter version, I add white chocolate chips along with the dark chocolate. Their sweetness contrasts nicely with the espresso and cocoa.

I can also add a thin layer of chocolate ganache after the brownies have cooled. A sprinkle of toasted almonds on top gives me an easy but impressive finish.

Storage/Reheating

I store my Mocha Almond Fudge Brownies in an airtight container at room temperature for up to 3 days. If I want to keep them longer, I refrigerate them for up to a week.

For the softest texture, I let refrigerated brownies sit at room temperature for about 15 to 20 minutes before serving.

When I want a warm, gooey brownie, I microwave an individual piece for about 10 to 15 seconds. I especially like serving a warm brownie with vanilla or coffee ice cream.

I can also freeze these brownies for up to 2 months. I wrap individual pieces tightly and place them in a freezer-safe container. I thaw them at room temperature before serving.

FAQs

Can I make Mocha Almond Fudge Brownies without coffee?

Yes. I can leave out the espresso powder and hot water if I want traditional chocolate almond brownies. The coffee enhances the chocolate, but the brownies will still be rich without it.

Can I use regular instant coffee instead of espresso powder?

Yes. I can use instant coffee if espresso powder isn’t available. I usually use a little more instant coffee because its flavor tends to be milder than espresso powder.

How do I keep my brownies fudgy instead of cakey?

I avoid overbaking and overmixing the batter. I remove the brownies when the edges are set but the center still produces moist crumbs on a toothpick. I also let them cool completely before cutting so the fudgy center has time to set.

Do I need to toast the almonds first?

I don’t have to toast them, but I prefer to. Toasting gives the almonds a deeper, nuttier flavor and makes them crunchier. I toast them briefly and let them cool before folding them into the brownie batter.

Can I make these brownies ahead of time?

Yes. I often think their texture is even better after they’ve rested for several hours. I can bake them a day ahead, cool them completely, and store them tightly covered until I’m ready to cut and serve them.

Conclusion

Mocha Almond Fudge Brownies are one of my favorite ways to make classic chocolate brownies more interesting. I get deep chocolate flavor, a subtle coffee kick, crunchy almonds, and a dense, fudgy center in every bite.
