Ingredients

  • 34 pounds chuck roast
  • 1 packet ranch seasoning mix
  • 1 packet au jus gravy mix
  • 1/2 cup unsalted butter
  • 68 pepperoncini peppers
  • 1/4 cup pepperoncini juice
  • 6 sandwich rolls, hoagie rolls, or brioche buns
  • 6 slices provolone or mozzarella cheese (optional)
  • Butter, for toasting the rolls (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Place the chuck roast in a slow cooker.
  2. Sprinkle the ranch seasoning mix and au jus gravy mix evenly over the roast.
  3. Top with the butter, pepperoncini peppers, and pepperoncini juice.
  4. Cover and cook on low for 8 hours or on high for 4 to 5 hours until the beef is fall-apart tender.
  5. Shred the beef directly in the slow cooker and stir it into the cooking juices.
  6. Lightly butter and toast the sandwich rolls if desired.
  7. Pile the shredded beef onto each roll.
  8. Top with provolone or mozzarella cheese if using.
  9. Broil the sandwiches for 1 to 2 minutes until the cheese is melted.
  10. Garnish with chopped parsley if desired and serve warm with extra cooking juices for dipping.
