Tender baked salmon coated in a savory miso lemon glaze with honey, garlic, ginger, and sesame oil. The glaze caramelizes beautifully while the salmon stays moist and flaky.

Ingredients

  • 4 salmon fillets
  • 3 tablespoons white or yellow miso paste
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 cloves fresh garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 green onions, sliced, for garnish
  • 1 teaspoon sesame seeds, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet or baking dish with parchment paper or foil.
  2. Pat the salmon fillets dry with paper towels and arrange them skin-side down on the prepared baking sheet.
  3. In a small bowl, whisk together the miso paste, lemon juice, lemon zest, honey or maple syrup, soy sauce, sesame oil, minced garlic, and grated ginger until smooth.
  4. Spread the miso lemon glaze generously over the tops and sides of the salmon fillets.
  5. Bake for 10–14 minutes, depending on the thickness of the fillets and desired doneness.
  6. For extra caramelization, broil the salmon for the final 1–2 minutes, watching closely to prevent the glaze from burning.
  7. Let the salmon rest briefly, then garnish with sliced green onions and sesame seeds. Serve with an extra squeeze of fresh lemon juice if desired.

Notes

  • White miso creates a mild, slightly sweet glaze, while yellow miso provides a stronger savory flavor.
  • For a spicy variation, add sriracha, chili garlic sauce, or red pepper flakes to the glaze.
  • For a sweeter glaze, add a little extra honey or maple syrup.
  • Replace part of the lemon juice with fresh orange juice for a sweeter citrus flavor.
  • Serve with steamed rice, noodles, roasted vegetables, cucumber salad, or a rice bowl with avocado and edamame.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
