A refreshing green smoothie made with sweet pineapple, mango, creamy banana, spinach, fresh mint, and bright lime. Frozen fruit creates a thick, frosty texture while mint and citrus add a crisp tropical finish.

Ingredients

  • 1 cup frozen pineapple chunks
  • 1 cup frozen mango chunks
  • 1 frozen banana
  • 1 packed cup baby spinach
  • 1/4 cup fresh mint leaves
  • 1 cup coconut water or milk of choice
  • 2 tablespoons fresh lime juice
  • 1 teaspoon finely grated lime zest, optional
  • 1 tablespoon chia seeds or hemp seeds, optional
  • 1 to 2 teaspoons maple syrup or honey, optional
  • 1/2 cup ice, optional

Instructions

  1. Add the coconut water or milk to a blender, followed by the spinach and fresh mint.
  2. Add the frozen pineapple, frozen mango, frozen banana, lime juice, optional lime zest, and optional chia or hemp seeds.
  3. Blend on high for 2 to 3 minutes, or until completely smooth and creamy, stopping to scrape down the blender as needed.
  4. For a thinner smoothie, blend in a small splash of additional coconut water or milk. For a thicker, colder smoothie, add the optional ice or additional frozen fruit.
  5. Taste and add 1 to 2 teaspoons maple syrup or honey if additional sweetness is needed. Blend briefly to combine.
  6. Divide between two glasses and serve immediately. Garnish with fresh mint or additional lime zest if desired.

Notes

  • For a creamier smoothie, replace some or all of the coconut water with coconut milk.
  • For extra greens, add another handful of spinach or use tender kale leaves with the tough stems removed.
  • For a pineapple-mint variation, omit the mango and replace it with additional frozen pineapple.
  • For additional protein, blend in protein powder, Greek yogurt, hemp seeds, or silken tofu and adjust the liquid as needed.
  • Add 1/2 ripe avocado for an especially creamy texture.
  • For a smoothie bowl, reduce the liquid and blend until thick enough to eat with a spoon.
  • Refrigerate leftovers in an airtight container for up to 24 hours and shake or stir well before drinking.
  • For longer storage, freeze leftover smoothie in ice cube trays and reblend with coconut water when ready to serve.
