These Mint Chip Donuts are soft baked donuts packed with refreshing mint flavor and sweet mini chocolate chips. Finished with a mint glaze and chocolate topping, they are a fun bakery-style treat perfect for breakfast or dessert.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 2 eggs
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon mint extract
  • Green food coloring, optional
  • 3/4 cup mini chocolate chips
  • 1 1/2 cups powdered sugar
  • 2 to 3 tablespoons milk
  • 1/2 teaspoon mint extract for glaze
  • Extra mini chocolate chips for topping (optional)
  • Chocolate drizzle for topping (optional)
  • Green sprinkles for topping (optional)

Instructions

  1. Preheat the oven to 350°F and lightly grease a donut pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, eggs, melted butter, vanilla extract, and mint extract.
  4. If using green food coloring, stir a few drops into the wet ingredients.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Fold in the mini chocolate chips gently.
  7. Transfer the batter into the prepared donut pan, filling each cavity about three-quarters full.
  8. Bake for 12 to 15 minutes, or until the donuts are lightly golden and spring back when touched.
  9. Let the donuts cool in the pan for several minutes before transferring to a wire rack.
  10. Whisk together the powdered sugar, milk, and mint extract to create the glaze.
  11. Dip the cooled donuts into the glaze and decorate with extra chocolate chips, chocolate drizzle, or green sprinkles if desired.
  12. Allow the glaze to set before serving.
