Ingredients
4 cups green tomatoes, finely chopped
2 cups apples, peeled and chopped
1 cup raisins
1 cup currants
1 cup brown sugar
1/2 cup granulated sugar
1/2 cup suet or butter
1/2 cup apple cider vinegar
2 tablespoons lemon juice
1 tablespoon lemon zest
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup chopped nuts (optional)
1/4 cup brandy or rum (optional)
Instructions
Place the finely chopped green tomatoes and apples in a large pot.
Add raisins, currants, brown sugar, granulated sugar, suet or butter, apple cider vinegar, lemon juice, lemon zest, spices, and salt.
Stir well and bring the mixture to a gentle simmer over medium heat.
Cook slowly, stirring occasionally, for 60–90 minutes until the mixture thickens and the fruits are soft.
Continue cooking until most of the liquid has reduced and the mixture reaches a jam-like consistency.
Remove from heat and allow to cool slightly.
If using, stir in chopped nuts and brandy or rum.
Transfer to clean jars and seal. Let cool completely before storing.
Notes
Use firm green tomatoes for best texture and flavor.
Butter can be used instead of suet for a vegetarian version.
Adjust spices to taste or add fresh ginger for extra warmth.
Store in sterilized jars in a cool, dark place for several months.
