Ingredients
4 large potatoes
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 cup black beans or 1/2 lb ground beef
1/2 cup onion, chopped
2 cloves garlic, minced
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
1/2 cup corn
1/2 cup salsa
1 cup cheddar cheese, shredded
1/2 cup sour cream or yogurt
2 tbsp fresh cilantro, chopped
1 jalapeño, sliced (optional)
1 avocado or 1/2 cup guacamole (optional)
Instructions
Preheat the oven to 200°C (400°F).
Wash and scrub the potatoes, pat dry, rub with olive oil, and sprinkle with salt.
Place potatoes on a baking tray or directly on the oven rack and bake for 45–60 minutes until tender.
In a pan over medium heat, sauté onion and garlic until soft.
Add black beans or ground beef along with chili powder, cumin, paprika, salt, and pepper, and cook until heated through.
Stir in corn and cook for a few minutes.
Slice open the baked potatoes and fluff the insides with a fork.
Fill each potato with the prepared mixture.
Top with salsa, cheddar cheese, and sour cream or yogurt.
Garnish with cilantro, jalapeños, and avocado or guacamole if desired.
Serve hot.
