Ingredients

  1. For the melon skewers:
    1 cup watermelon, cubed
    1 cup cantaloupe, cubed
    1 cup honeydew, cubed
    1 tablespoon fresh lime juice (optional, for drizzling)
    For the mint dressing:
    1/4 cup fresh mint leaves, finely chopped
    2 tablespoons honey or agave syrup
    2 tablespoons fresh lime juice
    1/4 cup plain yogurt or dairy-free yogurt (optional, for a creamier dressing)
    Pinch of salt
    For garnish (optional):
    Extra fresh mint leaves
    Lime zest

Instructions

Wash and peel the cantaloupe and honeydew melons. Cut all the melons into bite-sized cubes, removing any seeds from the watermelon and cantaloupe.

  1. Skewer the melon cubes onto wooden or metal skewers, alternating between watermelon, cantaloupe, and honeydew. Arrange the skewers on a serving platter.
  2. In a small bowl, whisk together the chopped fresh mint, honey (or agave syrup), lime juice, yogurt (if using), and a pinch of salt until smooth and aromatic.
  3. Drizzle the mint dressing over the melon skewers just before serving. Alternatively, serve the dressing on the side for dipping.
