Mediterranean Steak Bowls are a fresh and satisfying meal featuring tender marinated steak, hearty grains, crisp vegetables, tangy feta, and a creamy yogurt tahini sauce. Perfect for meal prep or a wholesome weeknight dinner, every bite is packed with vibrant Mediterranean flavor.

Ingredients

  • 1 1/2 lb flank steak or sirloin steak
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 cups cooked rice, quinoa, or couscous
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 2 cups baby spinach or mixed greens
  • 2 tbsp fresh parsley, chopped
  • For the sauce: 1/2 cup Greek yogurt
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh dill or parsley (optional)

Instructions

  1. Whisk together the olive oil, lemon juice, garlic, oregano, smoked paprika, cumin, salt, and black pepper to make the marinade.
  2. Coat the steak with the marinade and refrigerate for at least 30 minutes.
  3. Cook the rice, quinoa, or couscous according to package directions if not already prepared.
  4. Grill or sear the steak over medium-high heat until it reaches your preferred doneness.
  5. Let the steak rest for 5 to 10 minutes, then slice it thinly against the grain.
  6. In a small bowl, whisk together the Greek yogurt, tahini, lemon juice, garlic, olive oil, salt, pepper, and optional fresh herbs until smooth.
  7. Divide the cooked grain among four serving bowls.
  8. Top each bowl with sliced steak, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and spinach.
  9. Drizzle with the yogurt tahini sauce and garnish with chopped parsley before serving.
