Mediterranean Pesto Chicken Wraps are a healthy and delicious blend of grilled chicken, fresh veggies, tangy feta, and homemade or store-bought pesto wrapped in a soft tortilla, offering a burst of Mediterranean flavors.

Ingredients

  1. 2 cups cooked chicken, shredded or sliced
    4 large whole wheat or flour tortillas
    1/2 cup pesto (store-bought or homemade)
    1/2 cup crumbled feta cheese
    1 cup mixed greens (spinach, arugula, or lettuce)
    1/2 cucumber, thinly sliced
    1/2 cup cherry tomatoes, halved
    1/4 red onion, thinly sliced
    1/4 cup Kalamata olives, pitted and sliced
    1 tablespoon olive oil (optional, for drizzling)

Instructions

Cook the chicken (grilled, roasted, or sautéed) and slice or shred it into bite-sized pieces.

  1. In a small bowl, combine the pesto with a tablespoon of olive oil for extra smoothness, if desired.
  2. Lay the tortillas flat on a clean surface. Spread a generous amount of pesto on each tortilla, leaving a border around the edges.
  3. Evenly distribute the chicken, mixed greens, cucumber slices, cherry tomatoes, red onion, and Kalamata olives on top of the pesto.
  4. Sprinkle crumbled feta cheese on top of the veggies and chicken for a tangy, creamy finish.
  5. Fold in the sides of the tortilla and roll it up tightly, ensuring all the fillings are secure inside.
  6. Slice the wraps in half and serve immediately, or wrap them tightly in foil for a lunch on the go.

  1. For a vegetarian version, replace the chicken with grilled vegetables like zucchini, bell peppers, and eggplant.
  2. You can add hummus to the tortilla before the pesto for an extra creamy texture.
