Mediterranean Diet Spinach Lasagna is a wholesome, flavor-packed twist on the classic Italian favorite with layers of tender pasta, spinach, creamy cheeses, and rich marinara sauce. This hearty, comforting dish is perfect for family dinners, entertaining, or meal prep.

Ingredients

  • Lasagna noodles
  • Fresh spinach, chopped
  • Ricotta cheese
  • Feta cheese, crumbled
  • Mozzarella cheese, shredded
  • Parmesan cheese, grated
  • Egg
  • Marinara sauce
  • Onion, finely chopped
  • Garlic, minced
  • Olive oil
  • Italian seasoning
  • Dried oregano
  • Fresh basil or parsley, chopped
  • Salt
  • Black pepper

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the lasagna noodles according to the package directions until al dente. Drain and set aside.
  3. Heat the olive oil in a skillet over medium heat and sauté the onion until softened.
  4. Add the garlic and cook for about 30 seconds, then stir in the spinach until wilted. Remove from the heat and allow it to cool slightly.
  5. In a large bowl, combine the ricotta, feta, egg, Parmesan, Italian seasoning, oregano, salt, and black pepper.
  6. Fold the cooked spinach mixture into the cheese mixture.
  7. Spread a thin layer of marinara sauce over the bottom of the prepared baking dish.
  8. Arrange a layer of lasagna noodles over the sauce.
  9. Spread a layer of the spinach and cheese mixture over the noodles, followed by marinara sauce and a sprinkle of mozzarella.
  10. Repeat the layers until all the ingredients are used, finishing with marinara sauce and the remaining mozzarella and Parmesan cheese.
  11. Cover with foil and bake for 35 minutes.
  12. Remove the foil and bake for an additional 15–20 minutes, until the cheese is golden and bubbly.
  13. Let the lasagna rest for 10–15 minutes before slicing.
  14. Garnish with fresh basil or parsley and serve.

Notes

  • Frozen spinach may be used if thawed and thoroughly drained.
  • Oven-ready lasagna noodles can be substituted by following the package directions and using enough sauce.
  • Add zucchini, mushrooms, roasted eggplant, bell peppers, grilled chicken, turkey, or cooked lentils for variation.
  • Whole wheat lasagna noodles provide additional fiber and a heartier texture.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
  • Allow the lasagna to rest before slicing to help the layers set neatly.
