Meatballs with Mushroom Sauce is a comforting dish featuring tender, juicy meatballs simmered in a rich and creamy mushroom sauce. Perfect served over mashed potatoes, pasta, rice, or egg noodles for a satisfying family meal.

Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 small onion, finely diced, divided
  • 3 cloves garlic, minced, divided
  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped, plus extra for garnish
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 8 ounces mushrooms, sliced
  • 2 tablespoons butter
  • 2 cups beef broth
  • 1/2 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, egg, half of the diced onion, half of the garlic, Parmesan cheese, parsley, salt, and pepper.
  2. Mix until just combined and form into evenly sized meatballs.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Brown the meatballs on all sides until cooked through. Remove and set aside.
  5. In the same skillet, melt the butter.
  6. Add the remaining onion and cook until softened.
  7. Stir in the mushrooms and cook until browned and tender.
  8. Add the remaining garlic and cook for about 30 seconds.
  9. Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan.
  10. Stir in the thyme and bring the mixture to a gentle simmer.
  11. Add the heavy cream and cook for several minutes until the sauce begins to thicken.
  12. If desired, stir in a cornstarch slurry to further thicken the sauce.
  13. Return the meatballs to the skillet and simmer for 5 to 10 minutes.
  14. Taste and adjust seasoning as needed.
  15. Garnish with fresh parsley and serve warm.

Notes

  • Ground turkey, chicken, or pork can be substituted for the beef.
  • Use cremini, baby bella, shiitake, or portobello mushrooms for added flavor.
  • Add a splash of white wine to the sauce for extra depth.
  • Serve over mashed potatoes, rice, pasta, or egg noodles.
  • Store leftovers in the refrigerator for up to 4 days.
  • Freeze cooked meatballs and sauce for up to 3 months.
