Matcha Green Tea Molten Lava Cakes are elegant individual desserts with a tender cake exterior and a warm, gooey matcha center. The earthy flavor of matcha pairs beautifully with creamy white chocolate for a rich yet balanced treat.

Ingredients

  • 4 ounces white chocolate, chopped
  • 1/2 cup unsalted butter
  • 2 tablespoons matcha powder
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • Powdered sugar, for garnish (optional)
  • Fresh strawberries (optional)
  • Whipped cream (optional)
  • Vanilla ice cream (optional)
  • Fresh mint leaves (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Generously butter and lightly flour four ramekins.
  2. Melt the white chocolate and butter together until smooth, then whisk in the matcha powder.
  3. In a separate bowl, beat the eggs, egg yolks, sugar, and vanilla extract until pale and slightly thickened.
  4. Slowly fold the matcha chocolate mixture into the egg mixture.
  5. Gently fold in the flour and salt until just combined.
  6. Divide the batter evenly among the prepared ramekins.
  7. Bake for about 12 minutes, until the edges are set but the centers remain soft.
  8. Let the cakes rest for 1 minute, then carefully loosen the edges with a knife.
  9. Invert each cake onto a serving plate and remove the ramekin.
  10. Serve immediately with powdered sugar, fresh berries, whipped cream, or vanilla ice cream if desired.

Notes

  • Do not overbake to keep the centers molten.
  • Use culinary-grade matcha for vibrant color and balanced flavor.
  • The batter can be prepared up to 24 hours ahead and refrigerated before baking.
  • Store leftovers in the refrigerator for up to 2 days and reheat gently.
  • Add a small piece of white chocolate or sweetened red bean paste to the center before baking for a delicious variation.
