Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons matcha powder
  • 3 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 3 large eggs
  • 3 cups milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Matcha powder for dusting (optional)
  • Fresh berries for garnish (optional)
  • White chocolate shavings for garnish (optional)

Instructions

  1. In a large bowl, whisk together the flour, matcha powder, sugar, and salt.
  2. Add the eggs, milk, melted butter, and vanilla extract. Whisk until smooth.
  3. Strain the batter to remove lumps, then refrigerate for 30 minutes.
  4. Heat a nonstick skillet over medium heat and lightly grease it.
  5. Pour a small amount of batter into the pan and swirl to create a thin crepe.
  6. Cook for about 1 minute per side until lightly set.
  7. Repeat with the remaining batter, stacking crepes on a plate to cool completely.
  8. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  9. Place one crepe on a serving plate and spread a thin layer of whipped cream over it.
  10. Repeat layering crepes and cream until all crepes are used.
  11. Chill the cake for at least 2 hours before serving.
  12. Dust with matcha powder and garnish with berries or white chocolate if desired.
