Matcha Crepe Cake is an elegant layered dessert made with delicate matcha-infused crepes and light whipped cream. Its tender layers and subtle earthy flavor make it perfect for celebrations, afternoon tea, or special occasions.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons matcha powder
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 3 large eggs
  • 2 1/2 cups milk
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 ounces mascarpone cheese (optional)
  • Matcha powder, for dusting (optional)
  • Fresh strawberries (optional)
  • White chocolate shavings (optional)
  • Whipped cream (optional)
  • Fresh mint leaves (optional)

Instructions

  1. Whisk together the flour, matcha powder, granulated sugar, and salt.
  2. In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
  3. Gradually add the wet ingredients to the dry ingredients, whisking until smooth.
  4. Cover and refrigerate the batter for 30 minutes.
  5. Lightly grease a nonstick skillet and cook thin crepes one at a time until lightly golden on both sides. Cool completely.
  6. Whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form. Fold in mascarpone if using.
  7. Place one crepe on a serving plate and spread a thin layer of whipped cream over it.
  8. Repeat layering the crepes and cream until all the crepes are stacked.
  9. Finish with a final layer of cream and garnish with matcha powder and optional toppings.
  10. Refrigerate the assembled cake for at least 2 hours before slicing and serving.
